This homemade Kachumber salad is a refreshing addition to any meal, and it’s quick and easy to make with just 6 ingredients in 5 minutes. Whether you choose to dice the vegetables by hand or use a vegetable chopper for convenience, it’s a great way to add some extra veggies to your diet.

I personally use a vegetable chopper from OXO, which makes preparing this no-cook Indian salads a breeze. While there’s no strict proportion of ingredients, the combination of crunchy vegetables is what makes this salad so delicious.

I’ve kept the flavours simple to complement spicy curries. But you can also add spices like chaat masala, Kashmiri red chilli powder, or roasted cumin powder to enhance the taste of this fresh, light Indian kachumber salad.

Serve the salad chilled or at room temperature.

Ingredients & Substitutions

To prepare this Indian Kachumber salad recipe, you will need:

  • Tomatoes: Use ripe and firm salad tomatoes that won’t break down when chopped. Alternatively use Cherry or mini tomatoes.
  • Onion: I prefer red onion for its flavour in this raw salad. You can also use brown or yellow onions as a substitute.
  • Cucumber: Any English or regular cucumber is suitable for this recipe, and it’s not necessary to peel it.
  • Lemon or Lime: Use either in this salad recipe.
  • Coriander: Fresh coriander or cilantro is the best option for this Indian salad recipe, and you can also add some mint leaves or dill leaves for additional flavour.
  • Salt: Add salt to taste, and using ground black pepper is optional. If you prefer, use a small amount.

Using a vegetable chopper or knife, dice the cucumber tomato onion and add it to a bowl.

Easy Indian Salad recipe made in a chopper, that's light, refreshing and ready in just 5 minutes. Plenty of ways to customise to your liking!

Ingredients

  • cucumber (120g) diced to 1/4 inch cube
  • 2 salad tomatoes (120g) diced to 1/4 inch cube
  • ½ red onion (60g) diced
  • ½ lemon juice
  • ½ tsp salt or add more
  • ¼ tsp ground black pepper optional
  • 3 tbsp fresh coriander leaves chopped

Instructions

  • Combine all the ingredients in a small bowl.Toss the ingredients together well to mix the flavours.Taste and adjust the seasoning.

    ⅓ cucumber (120g), 2 salad tomatoes (120g), ½ red onion (60g), ½ lemon juice, ½ tsp salt or add more, 3 tbsp fresh coriander leaves

  • Serve the fresh and light Kachumber salad. You can also allow the salad mixture to sit for 10-15 minutes to let the flavours meld together.

  • Store any leftover salad in the refrigerator.The salad will keep well for up to two days.
