How To Make: Vegan Dill Pickle Pizza

To make my Vegan Dill Pickle Pizza recipe, you’ll need to make the Garlic Dill Pizza Sauce, then add it, along with your toppings, to a pizza dough base. The crust is covered in homemade garlic sauce instead of marinara, there’s a layer of vegan mozzarella cheese, and it’s topped off with a heaping helping of dill-seasoned pickle slices.

Vegan Dill Pickle Pizza Recipe With Garlic Dill Pizza Sauce (4)INSTRUCTIONS FOR VEGAN DILL PICKLE PIZZA RECIPE

To make the vegan dill pickle pizza, start by making the base, which is a garlic dill sauce. Heat olive oil over medium-low heat, add garlic, and cook for 1-2 minutes, not browning the garlic. Add dill, Italian seasoning, salt, and pepper, and continue to cook. While whisking, slowly add flour until the mix becomes a paste. Let cook, whisking constantly for 1-2 minutes. Slowly add soy milk, and continue whisking. Add nutritional yeast and allow the sauce to simmer for 5-10 minutes on low heat. The sauce will begin to thicken.

To assemble the pizza, preheat the oven to 500 degrees Fahrenheit, with a pizza stone heating on the middle rack. On a floured surface, roll out the pizza dough to a circle the size of your pizza stone. Placed the rolled out dough on a parchment-lined baking sheet or cutting board.

Brush the dough lightly with olive oil and set aside to rise for 10 minutes. Top the dough with 1/2 of the Garlic Dill Sauce, or more, depending on how saucy you like your pizza. Leave space around the perimeter for the crust. Cover the top of the pizza with vegan mozzarella. Then top with pickles and a generous amount of chopped, fresh dill and vegan parm.

Move the pizza to the pizza stone and bake on the bottom rack of the oven for 5 minutes. Transfer pizza to the top rack of the oven and bake for another 5-10 minutes until the cheese is melted and the crust is a crispy golden brown. Remove from the oven and let rest for 5 minutes before slicing and serving with a side or vegan ranch or hot sauce to dip. Enjoy this strange but beautiful creation!

Ingredients

Garlic Dill Pizza Sauce:

  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 1-2 Tbsp unbleached all-purpose flour (depending on if you like a thin or thick sauce)
  • 1 tbsp dried dill, or a handful of fresh dill finely chopped
  • ¼ tsp Italian seasoning
  • ¼ tsp salt + extra to taste
  • ¼ tsp pepper
  • 1½ cups soy milk
  • 1 Tbsp nutritional yeast

Toppings:

  • Pizzaz Dough of Choice (I used "Pizzeria-Style Dough" from my cookbook)
  • Vegan Mozzarella Style Cheese of Choice (I used "Its a Bella Mozzarella" from my cookbook)
  • Dill Pickles
  • Dried or Fresh Dill
  • Vegan Parmesan Style Cheese of Choice (optional)

Instructions

Garlic Dill Sauce:

  1. Heat olive oil and garlic in a small saucepan over medium-low heat. Cook for 1-2 minutes, whisking constantly. Be sure not to brown the garlic.
  2. Add dill, Italian seasoning, salt, and pepper and continue to whisk.
  3. While whisking, slowly add in flour, 1 tbsp at a time, until the mixture becomes a paste.
  4. Allow to cook, whisking constantly for 1-2 minutes.
  5. Slowly drizzle in soy milk, ½ cup at a time, whisking constantly.
  6. Add nutritional yeast and allow to simmer for 5-10 minutes on low. The sauce will begin to thicken.

Pizza Assembly:

  1. Preheat the oven to 500°F with your pizza stone on the middle rack.
  2. On a floured surface, roll out your dough and shape in a circle as wide as your pizza stone.
  3. Place dough on a piece of parchment paper on a baking sheet or cutting board.
  4. Brush the tops LIGHTLY with olive oil. Allow to rise for 10 mins.
  5. Top with ½ of the garlic sauce (or less, depending on how saucy you like your pizza), leaving space for a crust.
  6. Sprinkle vegan mozzarella evenly over the entire pizza.
  7. Top with pickles, and sprinkle a generous amount of dill.
  8. Bake the pizza on the bottom rack for 5 minutes.
  9. Transfer to the top rack and continue baking for another 5-10 minutes. 15 mins total cooking time. You want the cheese to be melted and the bottom to be golden brown.
  10. Remove the pizza from the oven and allow to rest for 5 minutes.
  11. Slicing and serve with a side of ranch dip or hot sauce.
